Ingredients
For Coconut Pancakes:
– ½ cup rice flour
– 2 tablespoons sticky rice flour
– 150 ml coconut cream
– 1 teaspoon MATCHAZUKI matcha powder
– 200 ml hot water
For Topping:
– 150 ml coconut cream
– 1 teaspoon MATCHAZUKI matcha powder
– 50 grams sugar
– ½ teaspoon salt

Instructions
1. Prepare the Pancake Batter:
In a mixing bowl, combine the rice flour, sticky rice flour, coconut cream, matcha powder, and hot water. Stir until smooth and well incorporated.
Let the batter rest for at least 1 hour to allow the flavors to blend.
2. Prepare the Topping:
In a separate bowl, mix together the coconut cream, matcha powder, sugar, and salt. Stir until fully combined and set aside. Let the topping mixture rest for at least 1 hour.
3. Cook the Pancakes:
Heat a Khanom Krok mold over medium heat and lightly grease it with oil.
Once the mold is hot, pour the pancake batter into each section of the mold, filling each about three-quarters full. Close the lid and cook until the pancakes begin to set, then add a small spoonful of the matcha topping on top of each pancake.
Close the lid again and cook until the edges are golden brown and the pancakes are fully cooked.
4. Serve:
When the pancakes are cooked, use a small spoon to carefully scoop them out of the mold. You can top them with red beans, shredded egg yolk, or other desired garnishes for added flavor and texture.
