– 90 grams cake flour
– 1 tablespoon baking powder
– 1 tablespoon MATCHAZUKI Medium-grade matcha powder
– 1 egg
– 120 cc fresh milk
– 3 tablespoons sugar
– Azuki red bean paste (for filling)

1. Prepare the Dry Ingredients:
– In a mixing bowl, sift together the cake flour, baking powder, and MATCHAZUKI matcha powder. Set the dry mixture aside.
2. Prepare the Wet Ingredients:
– In another bowl, beat the egg and sugar together until the sugar dissolves completely.
– Add the fresh milk to the egg-sugar mixture and whisk until combined.
3. Combine and Rest the Batter:
– Gradually add the sifted dry ingredients to the wet mixture, stirring gently with a hand whisk until well incorporated.
– Let the batter rest for about 1 hour. This resting time helps achieve the ideal consistency for cooking.
4. Cook the Pancakes:
– Heat a non-stick Teflon pan over low heat.
– Using a ladle, scoop small amounts of the batter and pour them into the pan to form round pancake shapes.
– Cook until small bubbles begin to form on the surface of the pancakes. Flip them over and cook until both sides are lightly golden and fully set.
5. Assemble the Dorayaki:
– Once the pancakes are cooked and slightly cooled, place a generous amount of red bean paste on one pancake.
– Top with another pancake, gently pressing down to sandwich the filling inside.
