Ingredients
Crepe Batter:
– 100 grams of cake flour
– ¼ teaspoon baking powder
– ¼ teaspoon salt
– 1 tablespoon MATCHAZUKI Medium-grade Matcha powder

– 380 grams of fresh milk
– 50 grams of granulated sugar
– 45 grams of melted vegetable oil or unsalted butter
Matcha Sauce:
– ½ cup fresh milk
– 3 tablespoons unsweetened condensed milk
– 1 tablespoon MATCHAZUKI Medium-grade Matcha powder
– 2 tablespoons granulated sugar
– 1 tablespoon cornstarch
– 10 grams unsalted butter
Instructions
Crepe Batter:
1. In a blender or using a hand whisk, combine all the crepe batter ingredients until smooth. Strain the mixture into a container to remove any lumps, then refrigerate for at least 2 hours to allow the batter to rest.
2. Once chilled, heat a flat Teflon pan over low heat and lightly grease with butter. Stir the batter well before cooking. Scoop one ladle of batter into the pan and swirl it around to create an even layer. When the batter begins to puff up, use a spatula to gently loosen the edges. Remove from the pan and set aside to cool.
Matcha Sauce:
1. In a small pot, combine all the ingredients for the matcha sauce: fresh milk, condensed milk, MATCHAZUKI Matcha powder, sugar, cornstarch, and butter. Stir well to ensure the matcha powder and cornstarch dissolve completely.
2. Place the pot over low heat and whisk constantly until the sauce thickens to a smooth consistency. Once thickened, remove from heat and set aside to cool.
3. If there is any leftover sauce, it can be stored in the refrigerator and used for drizzling over other desserts, such as Matcha Banoffee.
