– 1 teaspoon vanilla extract
Part 3 (Meringue):
– 2 egg whites
– 50 grams granulated sugar
– ½ teaspoon cream of tartar or lemon juice
Soft Ganache:
– 2 teaspoons MATCHAZUKI Medium-grade matcha powder
– 55 grams granulated sugar
– 75 grams hot water
– 50 grams evaporated milk (1)
– 15 grams cornstarch
– 65 grams evaporated milk (2)
– 50 grams unsalted butter
Instructions
1. Prepare the Chiffon Cake
Step 1: Mix Dry Ingredients
Sift the cake flour, baking powder, and matcha powder into a mixing bowl. Add the granulated sugar and salt, and whisk together until well combined. Set aside.
Step 2: Combine Wet Ingredients
In another bowl, mix the fresh milk, egg yolks, oil, and vanilla extract. Use a hand whisk to combine the ingredients thoroughly. Once mixed, pour this wet mixture into the dry ingredients from Step 1, stirring gently to combine.
