Ingredients
For the Dough:
– 60g All-purpose flour
– 3 tbsp Granulated sugar
– 1/2 tbsp MATCHAZUKI Medium-Grade Matcha Powder
– 1 Egg
– 50g Water
– 1 tsp Baking powder
– 1 tsp Baking soda
For the Filling (Choose One):
– Stir-fried minced pork
– Sausage

1. Prepare the Dough:
– In a mixing bowl, combine the flour, sugar, MATCHAZUKI matcha powder, egg, water, baking powder, and baking soda. Whisk until smooth and well blended. Set the mixture aside to rest for about 1 hour.
2. Cook the Crepes:
– After the dough has rested, heat a Teflon or non-stick pan over medium heat. Scoop about 1 tablespoon of the dough into the pan, spreading it out into a thin, even layer.
– Cook until the edges start to dry and the surface appears set, which should take about 1-2 minutes.
3. Add the Filling:
– Once the crepe is cooked, add your choice of filling to the center—whether it’s savory options like stir-fried minced pork or sausage, or a sweet custard filling. If using savory fillings, feel free to season with a dash of sauce and pepper for extra flavor.
4. Roll and Serve:
– Carefully roll the crepe around the filling and remove it from the pan. Repeat the process with the remaining dough and fillings.
