1. Prepare the Batter:
– Separate the egg whites from the egg yolks.
– Beat the egg whites with the sugar until soft peaks form.
– Add the egg yolks to the egg whites and continue to beat until well combined.
2. Mix the Dry Ingredients:
– Sift the cake flour and Matchazuki medium-grade matcha powder into the egg mixture. Gently fold the dry ingredients into the wet ingredients until smooth and well incorporated.
3. Cook the Pancake:
– Heat a Teflon pan over low heat and lightly grease with butter or oil.
– Pour the batter into the pan, forming small pancake-sized portions. Cook on low heat until golden brown on both sides, about 2-3 minutes per side. Once cooked, remove the pancakes from the pan and set aside to cool slightly.
4. Whip the Cream:
– In a separate bowl, whip the cream (add icing sugar for extra sweetness, if desired) until soft peaks form.
