Procedure
Chiffon cake
1. Mix part 1 together by sifting flour, baking powder and matcha powder into a mixing bowl first, followed by sugar and salt. Whisk with a hand whisk until the ingredients are combined and set aside.

2. Mix all of part 2, which is fresh milk, egg yolks, oil, vanilla extract, in another bowl. Use a hand whisk to beat until combined. Then pour this part into the dry part (step 1) and mix well. Set aside.

3. Take the egg whites in the third portion that was separated, add cream of tartar or lemon juice, beat with an electric mixer at medium speed until it becomes coarse foam. Gradually add sand until it is all added. Adjust to high speed, beat until the egg whites are glossy, and when you stop beating and lift the mixer, the mixture forms peaks and does not drip down.

4. Add the egg white mixture to the first mixture. Use a rubber spatula to mix the mixture well. When well combined, pour into the prepared mold. Bake at 180 degrees Celsius for about 25-30 minutes or check if the cake is done by inserting a toothpick into the center of the cake. If there are no crumbs stuck to it, the cake is done. Remove from the oven, let it cool, remove from the mold and slice the cake into layers as desired.

Mix matcha powder with hot water and stir until well dissolved. Pour into a pot, add sugar and evaporated milk (1), stir until dissolved. Bring to a gentle boil, then dissolve the cornstarch and evaporated milk (2) and pour into the pot. Stir until the mixture forms a whisk mark. Turn off the heat, add butter and stir until warmed through. Spread over the sliced cake and decorate beautifully.
