Ingredients
Part 1: Butter Base
– Unsalted butter (softened to room temperature) – 150 g
– Icing sugar – 120 g
– Salt – 1/8 tsp
– Egg – 1
Part 2: Cookie Dough
Matcha Dough:
– Cake flour – 145 g
– Baking powder – 2 g
– MATCHAZUKI Classic Matcha – 6 g
Genmaicha Dough:
– Cake flour – 145 g
– Baking powder – 2 g
– MATCHAZUKI Genmaicha Leaf (finely ground) – 5 g

White chocolate – 80 g
MATCHAZUKI Classic Matcha – 3 g
Instructions
Part 1: Preparing the Butter Base
1. In a mixing bowl, combine unsalted butter, icing sugar, and salt. Mix until smooth.
2. Gradually add the egg in two portions, mixing well after each addition. Set aside.
Part 2: Making the Cookie Dough
1. In a separate bowl, sift together MATCHAZUKI Classic Matcha, baking powder, and cake flour. Set aside.
2. Repeat the same process in another bowl using MATCHAZUKI Genmaicha Leaf instead of matcha.
3. Divide the butter mixture into two equal parts. Combine one half with the matcha flour mixture and the other half with the genmaicha flour mixture.
4. Use a spatula to mix each dough until smooth.
5. Place each dough between two sheets of parchment paper and gently press to flatten.
6. Freeze for 1 hour to firm up the dough.
7. Once firm, lightly press the dough with your hands before rolling it out to an even thickness with a rolling pin.
8. Freeze again for 30 minutes.
9. Using a 5 cm circular cutter, cut out cookie shapes from both doughs.
10. Arrange the cookies on a perforated baking mat. Lightly press each cookie with your fingertips to create a textured pattern.
11. Bake at 150°C for 15 minutes.
Part 3: Preparing the Matcha Filling
1. Melt the white chocolate and sift in MATCHAZUKI Classic Matcha. Stir until fully incorporated.
2. Pipe the filling onto one cookie and gently place another cookie on top to form a sandwich.
