While traditional recipes for this cake may seem complex, this version uses fewer ingredients and a streamlined method, making it accessible for beginners without compromising on flavor. – 35g Cornstarch
– 3 Eggs
– 60g Sugar (A)
– 60g Sugar (B)
– 1 tbsp MATCHAZUKI Medium-Grade Matcha Powder
– 2 tbsp Hot Water
– 250g Cream Cheese
– 30g Whipping Cream

Instructions
1. Prepare the Mold: Prepare a 2-pound mold with a removable bottom. Line the base with parchment paper, and wrap the outside of the mold with foil to prevent water from entering during baking. Set aside.
2. Make the Cream Cheese Mixture: Beat the cream cheese until smooth. Gradually add Sugar (A) and continue beating until fully incorporated. Add the egg yolks one at a time, mixing well after each addition.
3. Prepare the Matcha: In a small bowl, mix 1 tablespoon of MATCHAZUKI medium-grade matcha powder with the hot water until completely dissolved. Add the matcha mixture to the whipped cream, stirring to combine, then fold this into the cream cheese mixture. Stir until the mixture is smooth and well combined.
4. Add Cornstarch: Sift in the cornstarch and mix until the batter is smooth.
5. Whip the Egg Whites: In a separate bowl, beat the egg whites until fluffy. Gradually add Sugar (B) and continue beating until soft peaks form. Gently fold the whipped egg whites into the cream cheese mixture, ensuring everything is well blended.
6. Bake: Pour the cheesecake batter into the prepared mold. Bake in a preheated oven at 175°C (350°F) for 65-70 minutes. To ensure the cake remains moist, place a small cup of hot water in the oven during baking.
7. Cool and Serve: Allow the cheesecake to cool completely in the mold before removing it. For best results, refrigerate the cake for a few hours or overnight to set.
