– 200 grams fresh milk
– 100 grams whipping cream
– 4 tablespoons sugar
– 2 tablespoons MATCHAZUKI Medium-grade matcha powder (for a richer flavor, but 1 tablespoon can also be used)

– 1 egg yolk
– 2 tablespoons warm water (to dissolve matcha)

1. Prepare the Milk and Cream Base:
In a saucepan, combine the fresh milk, whipping cream, and sugar. Stir the mixture until the sugar is fully dissolved. Set aside.
2. Dissolve the Matcha:
In a small bowl, dissolve the MATCHAZUKI matcha powder in the warm water. Stir thoroughly until smooth and the matcha is completely dissolved.
3. Combine Ingredients on Low Heat:
Add the dissolved matcha mixture into the milk and cream base. Place the saucepan over low heat, stirring occasionally. Once the mixture gently begins to boil, remove it from the heat.
4. Incorporate the Egg Yolks:
Gradually pour the beaten egg yolk into the mixture, stirring constantly with a whisk to ensure the eggs blend evenly and don’t curdle.
5. Add Gelatin:
Soak the gelatin sheets in cold water to soften. Once softened, add the gelatin to the warm mixture, stirring until fully dissolved.
6. Set the Pudding:
Pour the pudding mixture into your desired molds or serving glasses. Allow it to cool to room temperature before placing it in the refrigerator. Let it chill for at least 5-6 hours, or ideally overnight, to fully set.
