Today I have another menu for my fans as usual, which is “Matcha Crepe Cake or Green Tea Crepe Cake”, an easy menu that can be made with just a Teflon pan. But today, I will add something a little more special by adding mashed red beans, making our crepe cake even more delicious. Let’s see how to make it.

Key Ingredients
Crepe batter
1. 250 grams of cake flour
2. ¼ teaspoon salt
3. 1 tablespoon of medium grade MATCHAZUKI matcha powder
4. 6 chicken eggs
5. Fresh milk 600 grams
6. 130 grams of sugar
7. 150 grams of vegetable oil or melted butter

Whipped cream and red bean paste for frosting the cake
1. 500 grams of whipping cream (if using unsweetened type, add 50 grams of sugar)
2. 1 tablespoon of medium grade Matchazuki green tea powder
3. Crushed red beans, as desired.

Procedure

1. Combine all crepe batter ingredients and mix well using a blender or a hand whisk. Strain the mixture into a container and refrigerate for at least 2 hours.

2. Place a flat Teflon pan over low heat, brush with a little butter, mix the batter well again. Scoop 1 ladle of batter onto the pan, swirl the batter around in the pan until it is evenly distributed. When the batter starts to puff up, use a spatula or rubber spatula to loosen the edges of the pan and set aside to cool.

3. Mix the chilled whipped cream with the green tea powder and whip until fluffy. Spread it thinly on the cooled crepe batter, layer by layer, alternating between the crepe batter and the red bean paste or as desired.

4. Once you have finished slicing, place it in the refrigerator to let the cream set, then cut it and serve.
