Strawberry Filling
1. 2 cups frozen strawberries
2. 3 tablespoons of sugar
Crumble
1. 50 grams of sugar
2. Cake flour 90 grams
3. Ground almonds 20 grams
4. Unsalted butter (leave until soft but still cool) 60 grams
5. ½ teaspoon baking powder
Green tea sauce
1. 20 ml. fresh milk
2. 20 ml. hot water
3. 100% MatchaZuki green tea powder, medium grade, 1 teaspoon
4. 1 tablespoon sugar
5. 2 teaspoons cornstarch
Procedure
1. Preheat oven to 175 degrees Celsius. Then, cut strawberries into ½-centimeter slices and mix with 3 tablespoons of sugar. Let it dissolve.
2. Mix all the cake ingredients together. Knead until smooth. Place in a removable bottomed mold, about 8 inches in diameter. Add the prepared strawberries and spread evenly.
3. Mix all the crumble ingredients together well using a butter chopper or your hands until well blended. The mixture will be in small lumps. Sprinkle on the strawberries and spread evenly. Bake at 175 degrees Celsius for about 30 minutes.
4. Meanwhile, combine all the green tea sauce ingredients and stir until melted. Microwave for 30 seconds. Remove and stir until well combined.
5. When the time is up, remove and let it cool. Cut into pieces and serve with matcha sauce.
