Matcha Cookies Green Tea Cookies

That is # MatchaCookies or # Green Tea Cookies . Green tea cookies are snacks that when baked have a clear green tea aroma and give a strong, crispy, firm green tea flavor that is fun to bite into. Key Ingredients

Part 1
1. Unsalted butter (leave the butter at room temperature) 150 grams
2. 120 grams of icing sugar
3. 1/8 teaspoon salt
4. 1 egg

Part 2
1. Cake flour 145 grams
2. Baking powder 2 grams
3. MATCHAZUKI Classic 6 grams

4. Cake flour 145 grams
5. Baking powder 2 grams
6. MATCHAZUKI Genmaicha Leaf 5 grams

Part 3
1. White chocolate 80 grams
2. MATCHAZUKI Classic 3 grams

Procedure

Part 1 Prepare the butter.
● Put unsalted butter, icing sugar, and salt in a bowl and mix well.
● Divide the eggs into 2 parts. Gradually add them to the butter one part at a time. Mix well and set aside.

Part 2 Cookie Dough
● Put Classic grade matcha powder into a sieve, followed by baking powder and cake flour. Sift all ingredients into a container and set aside.
● Repeat the same process in another container, replacing the matcha powder with finely ground roasted green tea leaves (genmaicha). Sift together with baking powder and cake flour as before and set aside.

● Divide the butter that was mixed and prepared in the beginning into 2 parts. Add half to the matcha flour and half to the genmaicha flour.
● Use a spatula to mix the flour and butter until smooth. Then place the cookie dough on a sheet of parchment paper.
● Cover the dough with a layer of parchment paper before using your hands to gently press the dough into a flat sheet.
● Place the dough sheet in the freezer for 1 hour (do the same steps for both matcha and genmaicha dough).


● After freezing until the dough has set, take the dough out and press it slightly with your hands before using a rolling pin to roll it out thinly.
● Place the dough sheet in the freezer again for 30 minutes and remove the dough sheet (do the same steps for both matcha and genmaicha dough).
● Use a 5 cm circle mold to press the matcha / genmaicha dough into pieces.
● Place the dough on a gridded air mat baking sheet and place another air mat on top.


● Use your fingertips to gently press the cookies to create a pattern on the surface.
● Place in oven at 150℃ and bake for 15 minutes.

Part 3 Cookie filling
● Sift Classic grade matcha powder into melted white chocolate and mix well.
● Squeeze the filling onto one baked cookie sheet and top with another.
