  1. MATCHAZUKI Excellent Grade Matcha Powder 3 grams (~1.5 teaspoons)
  2. Warm water 40 ml
  3. Fresh milk 150 ml
  4. 10 ml syrup (~2 teaspoons)
  5. ice

Brewing process

1. Dissolve matcha powder in warm water by sifting matcha powder through a sieve into a cup or bowl, then pour in warm water and use a Chasen or milk frother to beat the tea powder into the water. Then set aside.

2. Add ice to another glass.

3. Add syrup according to desired sweetness.

4. Pour in fresh milk and mix with syrup.

5. Pour the dissolved matcha over the fresh milk.

*** If you don’t have a dissolving device, try this method.

1. Put matcha green tea powder and sugar into a cup.
2. Tilt the cup and use a spoon to crush the mixture so that the sugar crystals grind into the matcha green tea powder until it breaks up and does not clump.
3. Gradually add warm water, tilt the cup and use a spoon to crush the matcha green tea powder against the side of the cup. Stir until completely dissolved.

Matcha Cookies Green Tea Cookies

That is # MatchaCookies or # Green Tea Cookies . Green tea cookies are snacks that when baked have a clear green tea aroma and give a strong, crispy, firm green tea flavor that is fun to bite into. Let’s see the ingredients and how to make it.

Key Ingredients

Part 1
1. Unsalted butter (leave the butter at room temperature) 150 grams
2. 120 grams of icing sugar
3. 1/8 teaspoon salt
4. 1 egg

Part 2
1. Cake flour 145 grams
2. Baking powder 2 grams
3. MATCHAZUKI Classic 6 grams

4. Cake flour 145 grams
5. Baking powder 2 grams
6. MATCHAZUKI Genmaicha Leaf 5 grams

Part 3
1. White chocolate 80 grams
2. MATCHAZUKI Classic 3 grams

Procedure

Part 1 Prepare the butter.
● Put unsalted butter, icing sugar, and salt in a bowl and mix well.
● Divide the eggs into 2 parts. Gradually add them to the butter one part at a time. Mix well and set aside.

Part 2 Cookie Dough
● Put Classic grade matcha powder into a sieve, followed by baking powder and cake flour. Sift all ingredients into a container and set aside.
● Repeat the same process in another container, replacing the matcha powder with finely ground roasted green tea leaves (genmaicha). Sift together with baking powder and cake flour as before and set aside.

● Divide the butter that was mixed and prepared in the beginning into 2 parts. Add half to the matcha flour and half to the genmaicha flour.
● Use a spatula to mix the flour and butter until smooth. Then place the cookie dough on a sheet of parchment paper.
● Cover the dough with a layer of parchment paper before using your hands to gently press the dough into a flat sheet.
● Place the dough sheet in the freezer for 1 hour (do the same steps for both matcha and genmaicha dough).


● After freezing until the dough has set, take the dough out and press it slightly with your hands before using a rolling pin to roll it out thinly.
● Place the dough sheet in the freezer again for 30 minutes and remove the dough sheet (do the same steps for both matcha and genmaicha dough).
● Use a 5 cm circle mold to press the matcha / genmaicha dough into pieces.
● Place the dough on a gridded air mat baking sheet and place another air mat on top.


● Use your fingertips to gently press the cookies to create a pattern on the surface.
● Place in oven at 150℃ and bake for 15 minutes.

Part 3 Cookie filling
● Sift Classic grade matcha powder into melted white chocolate and mix well.
● Squeeze the filling onto one baked cookie sheet and top with another.


It becomes a ready-to-serve matcha cookie. Enjoy it with a cup of hot or cold tea, or wrap it as a gift for someone you love. It will be impressive 😀

Fresh milk 350 ml
Sugar 80g
2 teaspoons of medium grade MATCHAZUKI matcha powder
Whipped cream 350 ml

Procedure

  • Mix medium grade MATCHAZUKI matcha powder with a little hot water. Mix well and set aside.
  • Combine the remaining ingredients in a pot, heat over low heat, stir until dissolved and boil gently. Then pour in the dissolved matcha mixture.
  • Stir the mixture continuously until the milk starts to curdle and thicken. Be careful not to burn it (about 30 minutes – 1 hour). Turn off the heat, let it cool down, then pour into the prepared container (it is recommended to boil or steam the glass bottle first to make it last longer).

  1. 400 grams of red bean paste

  2. 200 grams of glutinous rice flour

100 grams of white chocolate
70 grams of salted butter
Sugar 50 grams
2 eggs
Whipping cream 45 grams
All-purpose flour 80 grams

Procedure

How to brew thin Usucha green tea

หมายเหตุ วิธีการตามนี้จะไม่ใช่วิธีการชงตามพิธีชงชาของญี่ปุ่น

อุปกรณ์ที่ต้องมี (ตามรูปด้านล่าง)

1. Matcha-chawan (抹茶碗) ถ้วยสำหรับชงชา

2. Chasen (茶筅) เป็นไม้ไผ่ใช้สำหรับบดผงชาเขียวไม่ให้จับตัวเป็นก้อน

3. Chashaku (茶杓) เป็นไม้ไผ่ที่ใช้สำหรับตักผงชาเขียว

วัตถุดิบ

1. Uji Matcha: Excellent ตักด้วย Chashaku 1 ช้อนครึ่ง (ประมาณ 1 ช้อนชา)

2. น้ำร้อนประมาณ 80C ปริมาตร 60 ml

ขั้นตอนการชง

1. ตักผงชามัทฉะใส่ในถ้วย

2. ค่อยๆเทน้ำร้อนตามลงไปบนผงมัทฉะ

3. ใช้ Chasen “ปัด” ให้ผงมัทฉะแตกตัวเข้ากับน้ำ โดยให้ทิศทางการปัดไปทางด้านหน้าสลับกับด้านหลัง จนไม่พบผงมัทฉะจับตัวเป็นก้อน (จะเห็นเป็นฟองสีเขียวละเอียดลอยอยู่ด้านบน)

4. เสิร์ฟในถ้วยชงชาได้เลย

วิธีการต้มน้ำให้ร้อนประมาณ 80C

1. ต้มน้ำจนเดือดที่อุณหภูมิ 100C

2. เทใส่ภาชนะ (เช่นถ้วยชา) ที่เตรียมไว้ อุณหภูมิน้ำจะลดลงมาประมาณ 10C

3. จากนั้นค่อยเทลงไปบนผงชามัทฉะตามขั้นตอนที่ 2 ก็จะได้น้ำร้อนอุณหภูมิประมาณ 80C พอดี

Tip: ผง มัทฉะนั้นจริงๆไม่ได้ละลายน้ำแต่จะแขวนลอยอยู่ในน้ำร้อน ดังนั้นเราจึงควรดื่มทันทีในระหว่างที่ผงมัทฉะยังแขวนลอยอยู่ก่อนที่จะตก ตะกอนลงไปด้านล่าง
