Matcha Cookie, an easy but extraordinary menu

When it comes to cookies, the most basic bakery product that is easy to make. This can be seen from the current situation where many people have started to open their ovens to sell their products, to the point that customers themselves do not know which shop to choose from. Therefore, in order for us to have a bakery that is different from other shops, putting in creative ideas is something that must be taken into consideration at every step.

Start with making regular matcha butter cookies that can be easily differentiated from other shops by simply adding designs by coating them with chocolate or white chocolate, sprinkling them with a little more matcha powder or sprinkling them with chocolate chips, and decorating them with edible flowers. This creates a difference that makes plain matcha cookies look more valuable.

Matcha Cookie

In addition to adding toppings on plain green tea cookies, adding colorful ingredients to a single cookie is another idea that some beginners don’t dare to do. The reason is that they’re afraid that the taste and color won’t be beautiful and delicious. So they focus on making separate flavors. But if you already have some skill, it’s recommended to mix several flavors together. It will make that piece of cake more dimensional.

In addition, if anyone has the skill to mold, they can also make green tea cookies in various natural shapes, such as leaves or animals, to attract more customers, such as mothers and children.

Matcha Cookie Matcha Cookie Matcha Cookie

In addition to making cookies with various patterns, another interesting cookie-making style is making matcha mochi cookies.

Green tea cookies with soft and chewy mochi filling are Japanese-style cookies that no other shop in Thailand makes. If anyone is interested in trying to make this menu, let’s take a look at the recipe together……

Start by mixing 80 grams of glutinous rice flour with 80 grams of sugar and 90 grams of water. Mix until well blended and microwave at 600 watts for 1 minute and 20 seconds. Remove and mix until well blended. Microwave at 600 watts for another 10-20 seconds and remove and mix. Roll into a cylinder about 1 inch in diameter. Cut into pieces and set aside to make each piece about 1 cm thick.

Next, make matcha cookies in the style that the shop likes. Just put the pre-made mochi in the middle while molding the cookie dough and bake as usual because the mochi dough is cooked. As for the additional recommended technique, this matcha cookie should use brown sugar to make it even more delicious.

For those who want something different, another way is to make Oreo cookies but put green tea cream filling instead. It is another menu that looks delicious and is not difficult to make. Just use the cookie recipe that the shop already makes and modify it a little.

moji matcha cookie Oreo Cookies

In addition to giving importance to the product itself, the packaging for the cookies should also be different and stand out from others. Most shops like to put them in simple plastic cans or clear bags and stick the shop logo sticker because it is the most economical package cost. But if we add a gimmick to the cookies, or if we add a gimmick by attaching a bow or a cute message suitable for souvenirs, it will help increase the value and make people want to buy more for each other.

Cookie package Cookie package

We will see in Japan when we go to various places, they will make sweets and stamp them with the branding of that place. For example, at zoos or aquariums, they will make cookies with animal patterns and arrange them in beautiful boxes, making people who visit that place want to buy them as souvenirs.

Cookie box

Another way to arrange a serving set that should not be missed is a box set gift box for every festival. It is a very important thing that online sellers should not forget to take into account because customers these days focus on looking at the packaging first. Therefore, if our dessert is delicious, don’t forget to find a chic package to serve the dessert to customers to create another impression on the recipient.

A collection of green tea ice cream recipes for everyone.

Matcha ice cream is a simple recipe, but there are some subtle changes to the ingredients that can significantly impact the richness of the green tea. A famous ice cream shop in Tokyo’s Asakusa district offers a variety of levels of matcha ice cream. This time, you don’t have to go all the way to Japan to make delicious matcha ice cream in various levels. You can even use the same recipe to make Hojicha ice cream.

Matcha ice cream

Warm water 10 g. 20 g. 40 g. >>> Water will be used at a temperature of approximately 80 degrees.

The method for making green tea ice cream starts with dissolving green tea powder in water and beating until there is no tea powder left. Add sugar, fresh cream, and milk and beat until well combined. Place in the freezer and take it out and stir every hour until the texture is smooth. Japanese people often like to eat green tea ice cream with dango mochi, soft and chewy dough in the style of Japanese sweets, or fresh fruit like strawberries or oranges, as well as sweet red bean paste, which has a little sweetness to cut the richness of the green tea.

If you try this recipe and want a stronger or more diluted version of your green tea, you can adjust the ratios to your liking.

Add deliciousness and difference to ordinary green tea ice cream with 3 recommended recipes that will help you make your green tea menu even more amazing!! The method is very easy, just blend all the ingredients together and put it in the freezer, take it out and stir it often to make it smooth. It takes about 5-6 hours in total, depending on the coldness of each home’s refrigerator. Start with Vegan Matcha Avocado Ice Cream. This recipe is a vegan menu, suitable for people who are allergic to cow’s milk.

Vegan Matcha Avocado Ice Cream Vegan Matcha Avocado Ice Cream

ingredient

  • Half an avocado
  • ¾ cup almond milk
  • ¼ cup agave syrup or maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon green tea powder
  • ½ teaspoon salt
  • Add toppings like pistachios, mint leaves, or cocoa nibs to the avocado green tea ice cream.

Followed by another menu with a refreshing aroma, Matcha Mint Chocolate Chunk Ice Cream.

Matcha Mint Chocolate Chunk Ice Cream Matcha Mint Chocolate Chunk Ice Cream Matcha Mint Chocolate Chunk Ice Cream

ingredient

  • 1 and a half cups cream
  • 4 teaspoons green tea powder
  • 1 cup fresh milk
  • 4 egg yolks
  • ½ cup sugar
  • A pinch of salt
  • 1 cup mint leaves
  • Dark chocolate 70% 100 grams

method

  1. Combine egg yolks, salt, and sugar. Whisk until smooth and fluffy. Heat milk over medium heat and gradually pour into egg mixture. Once combined, add cream and matcha powder. Stir slowly and continuously until smooth and custard-like.
  2. Place the mint leaves in a sieve and pour in about half a cup of hot water. Once the mint leaves are wilted, use a spoon to crush them and squeeze out as much water as possible from the sieve as possible. Add the remaining mint leaves to the blender and pour into step 1. Mix well and refrigerate. This method will give you authentic mint ice cream without the need for artificial flavoring or coloring.
  3. Place in the freezer, taking it out and stirring every hour. After taking it out and stirring a second time, pour in half of the dark chocolate that was melted earlier and stir again. Continue freezing as usual.
  4. After the ice cream has set, sprinkle the remaining dark chocolate on top of the ice cream. Use an ice cream scoop to roll both the mint green tea ice cream and dark chocolate together. Serve in a cup or cone, garnish with a mint leaf again for a refreshing and fragrant touch.

The last menu I would like to recommend is Honey Matcha Raspberry Ice cream.

Making dessert fillings from matcha green tea powder

The technique of modifying ingredients and recipes to create a variety of flavors is something that bakery and cafe owners should know. Sometimes, many people go to study baking, but when they want to modify the dessert they learned to create the desired flavors, they end up using the wrong ingredients.

When making green tea cream as a filling for desserts, some people prefer to buy ready-made ones that are already available on the market for convenience. However, the flavor, intensity, and color of the green tea may not be as intended.

Matchazuki would like to share how to make green tea cream easily. If you are a Hojicha tea lover, you can replace the green tea powder in the recipe with Hojicha tea powder in the same amount. However, I recommend using green tea powder for desserts because it is delicious, has a beautiful color, and has a better taste than using tea leaves.

Matcha filling Matcha filling

If you’d like to try making your own matcha custard filling, it’s easy to make. Simply heat 125 ml. of milk in a saucepan until lukewarm (not boiling). If steam rises, turn off the heat. Then, beat 1 egg yolk with 35 g. of sugar until pale yellow. Sift 13 g. of cake flour and 1/2 teaspoon of 5 g. of matcha powder into the mixture and continue beating. Gradually pour the warm milk into the saucepan. Heat over low heat, stirring constantly with a spatula until the cream begins to thicken. If you see bubbles rising, heat for another minute and turn off the heat. Then, add the butter and stir until melted. Pour the cream into a flat plate, cover with plastic wrap, and refrigerate for about an hour. This type of cream has a thick texture similar to that found in cream-filled buns, making it perfect for filling bread or pies.

matcha cream

But if it’s green tea cream, the texture is soft and smooth. It can be used as a filling for cakes like crepe cakes, cream puffs, or roll cakes. This type of filling has a light, soft, and smooth texture. You can eat it continuously without it being heavy or greasy because it’s made from just 3 simple ingredients: 400 ml. whipping cream, 1/3 cup of green tea powder, and 1/3 cup of sugar. Mix them together and beat with a whisk until soft peaks form. You can tell when soft peaks form by stopping the whipping and lifting the whisk. The cream at the tip of the whisk will bend down slightly. This type of cream is soft and smooth. It’s often used in Japanese-style bakery products. However, if you beat it for too long, our soft green tea cream filling will turn into a heavy cream that can be used to spread around the cake for decoration or to squeeze the cream into various patterns.

matcha cream

Or if it’s green tea spray to eat with bread, just mix 12 g green tea powder, 50 ml fresh milk, 150 ml fresh milk, 100 ml whipping cream, 40 g sugar together in a pot. Simmer over low heat for 15 minutes. You’ll notice that the mixture will reduce by 50% and become thicker.

matcha custard

But if you want matcha lava filling, start by mixing 1 ½ teaspoons of gelatin powder with 2 tablespoons of water. Stir well and set aside. Then beat 2 eggs, ½ cup sugar, and 4 tablespoons of cornstarch together and set aside. Put 2 cups of milk, 1 cup of whipping cream, ¼ cup of matcha powder, and ½ teaspoon of salt in a saucepan over low heat. Use a whisk to mix until the matcha powder dissolves well. Then pour in the egg mixture and stir until the mixture thickens. Once the milk mixture thickens, turn off the heat. Then add the prepared gelatin and butter and stir to combine. Place in the refrigerator until cool. Then put it on bread, steamed buns, or any other desserts that you want to make into lava. This one has a lava filling because it uses butter in the filling. When you reheat it and cut the dessert, it will have a flowing lava texture.

If you have other dessert recipes you’d like to make with matcha flavor but aren’t sure where to start, such as with a chocolate filling, you can simply replace the same amount of cocoa powder with matcha powder. For a richer, more vibrant color, try adding 2-5 grams of matcha powder at a time to avoid overpowering the bitterness. If you’re allergic to cow’s milk, you can also replace soy milk with cow’s milk. Now, you can easily adapt and create a variety of desserts to please MATCHA lovers, without relying on pre-made fillings that may contain preservatives or artificial flavorings, or using artificial green coloring instead of pure matcha powder. 🙂

Various ideas with green tea donuts

You’ll see that donuts are trending right now. Many shops are starting to make donuts in various forms. New shops that specialize in donuts are opening up. Even a famous fried chicken brand is mixing donuts into their menu at Matchazuki. So, we can’t miss out on some great ideas from a new donut shop in Kyoto, Koe Donut, and Floresta Nature Donuts, a donut shop known for its cuteness, one of Japan’s top shops.

At Koe Donuts, you’ll find a variety of unusual donuts and flavors not available in Thailand, including the matcha donut topped with pistachio nuts. While every donut in the shop is made with simple ingredients for a traditional donut taste, the freshness of the donuts, made in-house every morning, and the abundance of creative ideas make this shop a must-visit for anyone visiting Kyoto. The shop also features a “Powder Factory,” where you can watch the donuts being made live while enjoying them. The brand’s goal is to create a connection between Japanese culture, fashion, modern design, and food, and to share this message with the world in various forms. Therefore, each donut is beautifully presented and unlike any other, such as using large beans, a signature ingredient in Japanese wagashi (Japanese sweets), as a topping. Kyoto is renowned for its delicious matcha, so the shop offers the Uji matcha tiramisu donut melt, which reimagines the familiar donut experience in the form of a cake.

Floresta nature donuts

Another shop that many people are already familiar with is Floresta nature donuts in the Koenji area of Tokyo. This shop uses organic flour, the doughnut texture is a bit coarse, typical of wholewheat flour, and they come in many shapes. They also have donuts shaped like cute animals, using various flavors of glaze, such as green tea, chocolate, and strawberry, to make the desserts cute and bright. Forget the image of normal round donuts with a hole in the middle. This shop has many branches outside of Tokyo, including in Nara, Kyoto, and Osaka.

Floresta nature donuts Floresta nature donuts

After getting creative ideas for donuts in various forms, we will continue with ideas for green tea donut menus with 3 types of decorations that use few ingredients and are very easy to make, including:

  1. Matcha Glaze is very easy to make. Just mix matcha powder and icing sugar together, then pour in almond milk and stir until combined. Then, dip donuts in the matcha glaze. The ingredients for this recipe include:
  • ½ cup icing sugar
  • ⅛ to ¼ teaspoon matcha powder, depending on how green you want your dessert.
  • 1 tablespoon almond milk

2. Matcha Cane Sugar This one is not very dark green tea color. Start by dipping the finished donuts in coconut oil, then roll them in cane sugar and green tea powder that have been mixed together beforehand. You will get light green non-nuts. The ingredients for this recipe are:

  • ½ cup cane sugar
  • ¼ to ½ teaspoon matcha powder, depending on how green you want your dessert.
  • ⅓ cup coconut oil

3. Matcha Powdered Sugar After frying the donuts, dip them in the green tea powder and icing that were mixed together beforehand. The powder will stick to the donut dough, giving it another green color and texture. The ingredients for this recipe include:

  • ½ cup icing sugar
  • ¼ to ½ teaspoon matcha powder, depending on how green you want your dessert.

Or if you’d like to make donuts out of matcha dough and decorate them with white chocolate or white icing to contrast the donuts, it’s another beautiful and delicious look. Or even changing the shape of a matcha donut that you’ve already made into other shapes will make it even more delicious and will definitely make you want to take a photo and share it on social media.

Japanese green tea cake recipe, suitable for people with sensitive skin!

When talking about the main ingredients for making desserts, many people think of milk, eggs, and butter, which are ingredients with a fragrant and delicious smell. But on the contrary, these ingredients make the body work hard to break them down. Some people may be able to eat them in limited quantities. Moreover, nowadays there are more and more children who are allergic to these foods. Macrobiotic food is another option for this group of people.

Many people may feel that if it is a healthy dessert, 100% fine whole wheat flour must be used to make the dessert. This whole wheat flour is unbleached flour that also contains rice bran. However, this type of cake is often hard and not delicious. In Japan, it is popular to mix cake flour in half of the flour recipe to make the cake soft and fluffy and have the texture of a cake.

This time, we are going to please those who don’t have an oven with a recipe for a soft and fluffy Japanese-style pound cake, which can be made by steaming instead. The pound cake will gradually cook with hot steam, with a soft and moist texture that is smooth on the tongue. The slightly bitter taste of the green tea goes well with the sweet taste of the black beans. Even beginners who are new to baking can do this recipe because all you have to do is beat all the ingredients together well, especially the flour and liquids, which should be mixed together smoothly without stopping. Then pour it into the mold and bake quickly, otherwise the cake will not be soft and fluffy. However, if some steamed cake recipes contain oil and flour, mix the ingredients together until you can’t see any flour grains because if you stir for too long, the cake will not rise as well.

Matcha cake

ingredient

1. 100 grams of cake flour

2. Ingredient A

  • 50 grams of fine whole wheat flour
  • 2 teaspoons baking powder
  • Tensai sugar or brown sugar, 40 grams. This helps to balance the intestines. When consumed, blood sugar levels will be lower than other types.
  • A pinch of salt

3. Ingredient B

  • 2 teaspoons green tea powder
  • 1 ⅓ tablespoons soy milk

4. Ingredient C

  • 2 tablespoons of corn syrup or baesae is a sweetener that is slowly absorbed by the body, so the body doesn’t have to work as hard.
  • 1 tablespoon maple syrup
  • 1 tablespoon grapeseed oil
  • 100 ml soy milk

5. ¼ cup black beans, boil until cooked and set aside.

method

1. Sift cake flour into a mixing bowl. Add in ingredient A and half of the boiled black beans. Use a hand whisk to mix well and set aside.

2. Pour mixture C into a mixing bowl and use a hand whisk to mix until smooth. Then pour into part 1 and use a rubber spatula to mix until just combined . Do not mix for too long, just until smooth.

3. Mix ingredient B until smooth. Pour into part 2. Mix together quickly because if left for too long, the green tea will clump together, making it difficult to mix all the ingredients together.

Matcha cake

4. Pour the mixture into the desired mold or cup. Place the mold on a steamer with boiling water and steam for 30 minutes. When cooked, remove from heat, remove from the pan, and serve. If not eating right away, place on a wire rack to cool completely.

5. After the cake has cooled, wrap the pound cake tightly in clear plastic wrap and refrigerate. It can be kept for up to 3 days. If kept at room temperature, it is recommended to eat within 1-2 days. Or if you want to eat it warm, you can steam the cake again for about 40 seconds after the water boils.

Following the health trend of RAW SWEETS

With the COVID-19 pandemic raging, many people may be paying more attention to their health. However, many still feel that eating sweet and creamy desserts can boost their happiness during stressful times. However, there is another type of dessert that is incredibly healthy, packed with vitamins, minerals, and complete nutritional value. It helps improve digestion and promotes a healthy metabolism. These desserts are called Raw Sweets.

Raw Sweets are made from fresh fruits, vegetables, and all ingredients processed at a temperature not exceeding 46 degrees Celsius. They do not contain flour or sugar, but instead use brown rice or unrefined grains, which are complex carbohydrates. They are truly made from natural ingredients.

The highlight of Raw Sweets is that no heat is used, whether it is baking, steaming, or boiling, in any of the ingredients or preparation. Instead, the ingredients are simply mixed together and refrigerated instead of baking or drying the fruits naturally.

The main ingredients commonly used for making Raw Sweets include:

Almond Milk

1. Almond milk has a rich flavor and is ideal for adding to ice cream or cake fillings in place of fresh cream or milk. The almond pulp left over from squeezing almond milk can also be used to line the base of cakes or tarts.

Matcha Raw Sweets

2. Cashew nut cream, made with agave syrup and coconut oil, has a rich, creamy flavor similar to fresh milk cream. It can be used in ice cream, cake fillings, and tarts. You can make cashew nut cream once and freeze it for long-term use.

For any restaurant that already has a non-lean, non-clean dessert menu, during this time when the disease is spreading, preparing desserts with high-quality ingredients using the Raw Sweets method is another idea that is worth adapting to the restaurant’s menu, such as:

Matcha Brownie

Raw Matcha Brownies, a brownie menu that many people like, is easy to make. But who knew that you could make it with a clean recipe like this? The ingredients are not many, including:

  1. 30 grams of coarsely chopped dried dates
  2. 40 grams of walnuts
  3. 40 grams of almond powder
  4. 2 teaspoons cocoa powder
  5. 2 teaspoons agave syrup
  6. 1 teaspoon liquid vanilla extract
  7. 2 teaspoons green tea powder

method

  1. Blend the dates until smooth. Add the almonds, agave syrup, and vanilla. Mix until well combined.
  2. Divide the mixture into two equal parts. Mix the walnuts and cocoa powder in the first part. Mix the green tea powder in the second part.
  3. Pour the cocoa mixture into the mold, spreading it evenly until it’s full. Then pour the green tea mixture on top and press it firmly. Refrigerate for about 1-2 hours to set. Enjoy with warm almond milk or add a little honey for a sweeter taste.

In addition to the Raw Sweets Matcha Brownie recipe, there are many other recipes that can be adapted, such as Pistachio Matcha Bars and Raw Matcha Cheesecake .

Bread flour 250g
1 egg
Fresh milk, plain, 120g
45g granulated sugar
Yeast powder 4g
50g butter
Salt 5g

Green tea custard filling
Hot water 250g
1 tablespoon MATCHAZUKI medium grade matcha powder
45g granulated sugar
A pinch of salt
Fresh milk 200g
30g flour filling
10g unsalted butter

Procedure
bread

  • Combine flour and yeast in a mixing bowl and mix well.
  • Mix eggs, sugar, salt, and fresh milk together and pour into the flour mixture. Knead until no flour powder is visible.
    3. Add butter and knead until the dough is smooth and can be pulled into a film. This takes about half an hour.
    4. Divide the dough into balls, each about 40 grams. Place them on a buttered tray. Rest the dough until it has doubled in size (about 2 hours). Bake in a preheated oven at 180 degrees for about 15-18 minutes. When golden brown, remove from the oven and brush with melted butter. Let cool, then poke holes in the top to prepare for the filling.

Green tea custard filling

  • Put hot water and green tea powder in a pot, stir until well dissolved, then add sugar and salt, stir until dissolved, then set aside.
  • Mix fresh milk with the flour mixture and stir until dissolved.
  • Bring the first mixture to a boil, then pour in the fresh milk. Stir quickly until the mixture thickens to the point where you can see the whisk mark. Turn off the heat and remove from the stove. Add the butter and stir until well blended. Wait until it cools down. Scoop into a piping bag and pipe into the holes we made on the bread.

“Matcha Custard Bread or Green Tea Bread” is a bread that may require some effort to knead, but I guarantee that the taste is delicious, rich, sweet, and satisfying, definitely not inferior to the famous ones ^^

Matcha White Choc With Dried Fruit
